Executive Chef Aliano Decka
At only 14 years of age, Aliano enrolled in Italy’s first culinary institute, Iipsar Tor Carbone in Rome, Italy where he was born.
Proudly completing and exceling in his training Aliano was eager to start in his culinary profession. He always knew food was what he wanted to do. Reminiscing of his first rigatoni he cooked alone in Italy at 6 years old because of always watching his grandmother cook, “I cooked it in my grandma’s pot where she would heat her milk, it was so salty but I loved it and ate it anyway!” The smile on this face was just priceless.
At age 17 he moved to London’s Hyatt Regency London: The Churchill Hotel. A luxury hotel that truly meets ones expectations at a Michelin Star Italian cuisine at Locanda Locatelli. Aliano received multiple certificates of recognition for his cuisine alongside the chef.
Ready to venture off in his culinary travels to the US he completed a year and a half in London and then stepped in as a Sous Chef at proclaimed “extraordinary” by Zagat’s, Armani’s at the Grand Hyatt, Tampa Bay, Florida. He was the right hand to the executive chef and none the less executed the most refined Spada con Grangio (swordfish with jumbo lump crab) Filetto di Manzo (grilled beef filets and lobster tail, Osso Buco, Cotoletta alla Griglia (veal) and more. Being able to create custom seven-course dinners paired with wines for $500 per person allowed him to present his play on Italian cuisine to their high profile guests.
The two and a half years at Armani truly prepared him for his next journey. Plum VIP Lounge at the Hard Rock Hotel & Casino Tampa, Florida. Plum VIP lounge is the ultimate in luxury. Entrance is by invitation only. You can sip on sophisticated cocktails from master mixologists at same time sample exotic dishes from Private Chef Aliano. His fluency in English, Italian, French and Greek impressed his foreign guests and made them feel at home. This experience is one he will never forget as he was able to personally please the palates of such celebrities as Beyoncé, Michael Jordon, Michael DeBartolo and so many more by using his culinary techniques.
After a blissful four years at Plum VIP Lounge, it was time to hit the Big Apple. Every chefs’ career should make its way through New York City at least once in a lifetime. Executive Chef Aliano was now at Lido’s, New York City preparing mouthwatering lavender lamb chops and seafood risotto that left everyone with a smile.
After all these years of hard work, he definitely deserved a holiday in Clearwater Florida to relax and rejuvenate his mind and body for more to come. From East to West Chef Aliano was ready for the California life! Where Italian and fresh seafood can meet with love. Close to the shores of Pacific beach Café Bella Italia was home to Aliano in 2015.
Gradually making his way into our Gaslamp Quarters by working at Chianti Italian Restaurant. His continued search for greatness led him to team up with Wally Mona and became a part of the WM Entertainment Group family. He now holds the title of Corporate Executive Chef to WM Entertainment Group and Executive Chef to Gaslamp Quarters Exclusive Italian Steak House, Carne Prima. Experience all of Aliano’s expertise from his travels and time with Zagat proclaimed and Michelin star chefs and restaurants, his knowledge of dried/cured meats personally taught to him by Walter Apfelbaum, Prime cuts meats like you have never seen prepared, risottos, homemade sauces, hand cut seafood, exquisite presentations and wine parings with our extensive fine wine selections.
